Char Fasl is a family owned and operated Persian restaurant that has been serving the Conejo Valley since 1999. The defining characteristic of Persian cuisine is that it is light and healthy. Meats are charbroiled, vegetables are used liberally – and heavy oils and sauces are not used at all. At Char Fasl you not only find this light and healthy Persian cuisine, but you also find a wide variety of dishes. The predominantly Persian clientele of the early years has evolved to now include customers from other cultural backgrounds and those that simply want to eat healthy food. For example, Char Fasl is a favorite stop for fitness trainers and people on diets.
The Char Fasl menu includes appetizers, salads, kabobs, stews, sandwiches, vegetarian meals; as well as beef, chicken, lamb, and seafood dishes. Most of the appetizers are vegetarian, with "hummos", "tahtig", and "kashk o bademjan" being the most popular. Salads come with or without charbroiled chicken, and the "salade shirazi" is a favorite. All the kabobs, being charbroiled, are very healthy and popular among those who watch their diets. The "kabob barg" uses the absolutely best cut of fillet mignon. The "beef koobideh" kabob made with ground beef, as well as the "boneless chicken kabob", the "lamb kabob", and the "salmon kabob" are also very popular. Those who prefer a sandwich will find several chicken or beef choices. There is also a separate, attractively priced, lunch menu, served from 11AM to 3PM, Monday through Friday, where each item on the menu is served with a generous portion of soup or salad. The expansion and remodeling completed in May 2005 gives Char Fasl a warm yet classy atmosphere that is European. The warm colors and comfortable seating add to your dining pleasure. The floor-to-ceiling windows with their graceful, see-through curtains generate a sense of openness while preserving privacy. Outside seating under the shade of a tree is also available. Live Entertainment: On Friday and Saturday nights Char Fasl is not only the place to enjoy great food, but also the place to be entertained. There is live music, a singer specializing in international music, and a belly dancer.
Carryout: At Char Fasl, the carryout orders are a significant part of the business. There is speculation about why this is the case – but one reason given is that Persian cuisine "carries well". In other words, the food tastes great even when it is only warm, and it also doesn’t lose any of its taste when it is re-heated. Many business lunches in the area are carryout orders from Char Fasl.
